We do one thing — live trompo al pastor with all the fixings — and we do it well. Start with the base experience, then add the stations and hours that fit your event.

- Live trompo al pastor experience
- 3 proteins of your choice (carnitas, asada, barbacoa, adobo chicken, chorizo, vegetariano)
- Hand-pressed corn tortillas on the comal
- Full salsa bar (verde, roja, habanero, seasonal)
- Grilled onions, cilantro, lime, radish, pickled jalapeños
- 2 hours of service (add extra hours as needed)

Agua Fresca Station

Jamaica, horchata, tamarindo. Unlimited refills, served from glass dispensers.
Elote Station

Charbroiled corn on the cob with Mexican toppings — crema, cotija, lime, chile, tajín.
Branded Experience

Custom signage, branded menu cards, themed décor around the trompo and stations.
Extra Hour of Service
+$350 / hour
Extend service beyond the included 2 hours. Up to 5 extra hours.
The fine print
Travel & delivery
A delivery fee is added based on one-way distance from our Longmont kitchen — 5% within 15 miles, scaling up for further events. We service up to 100 miles.
Staffing
The base crew of 3 covers up to 100 guests. We add one server per additional 50 guests at $250 each to keep service moving.
Service fee & gratuity
An 8% service fee covers permits, insurance, and consumables. Gratuity is optional and split among the crew.
Deposit
A 30% deposit locks in your date. Final balance is due the week of your event.
