Our story
Born from the corner taquerías of CDMX.

Trompo Tacos started with one obsession: that perfect bite of al pastor — pork shaved off a vertical spit, kissed by flame, caught with a tortilla, and finished with a thumb-flick of charred pineapple. Mexico City corner taquerías do it best. Northern Colorado deserved the same.
Today we travel the Front Range bringing live trompo carving, paleta carts, and full Mexican market experiences to weddings, corporate events, and private parties. Every tortilla is hand-pressed. Every salsa is charred to order. Every event ends with people asking when we're coming back.
