Why do you need to arrive 3 hours before service?

The trompo is a vertical spit that cooks our al pastor over an open flame. It takes time to fire the burners, bring the trompo up to temperature, and let the layered, marinated meat slowly cook into that signature crust before we can carve the first taco. On top of that, we set up the station, hand-press the tortillas, and prep the salsa bar on site. Three hours before service is the minimum we need to deliver food that's worth waiting for.

How long is service?

Every package includes 2 hours of active service. Need more time? Add the Extra Hour of Service add-on ($350) — you can stack multiple. We'll keep the trompo spinning as long as you like.

What's the minimum guest count?

Accepted Answer

50 guests. The trompo and our crew are built for events of that size and up — it's what makes us efficient and lets us keep pricing transparent.

What's included in every package?

Accepted Answer

Live trompo with al pastor, hand-pressed corn tortillas on the comal, a full salsa bar (verde, roja, habanero), grilled onions, cilantro, lime, radish, plus setup and breakdown. Packages differ only in the number of additional proteins and the crew size needed to keep service flowing.

How do deposits and cancellations work?

Securing your date requires a non-refundable 30% deposit, paid by card at checkout. The remaining 70% is automatically invoiced 14 days before the event (you can pay it sooner from your manage-event link). Cancellations 30 or more days before the event get a full refund of the deposit; inside 30 days, no refund. Full terms are on our Terms page.

Can I send a request without paying right away?

Yes. Use the "Send as inquiry" button on the quote page. We'll review it and reach out — but the date stays open to other clients until a deposit is received.

Question 7

How does the travel fee work?

Accepted Answer

Travel is 5% of your subtotal within 25 miles of our Longmont (80501) kitchen, then +1% per additional mile out. We serve events up to 100 miles away. The exact percentage shows in your estimate as soon as you verify your venue address.

Question 8

Do you offer vegetarian or vegan options?

Accepted Answer

Yes. Our Vegetariano (grilled nopales, mushrooms, roasted poblano) is available on every package on request and is fully vegan.

Question 9

What space do you need on site?

Accepted Answer

Roughly a 10×10 ft footprint for the trompo and station, ideally outdoors or under a covered area with ventilation. We bring everything else — propane, serveware, prep tables.
